Slow-cooked salmon

- 2-pound salmon fillet, skin on or off
- Generous handful of fine herbs such as parsley, cilantro, dill, or fennel
- Salt
- Olive oil
Prep
Adjust oven rack to middle position and heat oven to 225 degrees.
Make a bed of herbs on a baking sheet. Season the fish with salt and tuck it into the bed of herbs. Drizzle olive oil onto the fish and rub it in evenly with your hands. Insert a temperature probe into the thickest part of the fish. Slide the pan into the oven.
Roast until the fish reaches an internal temperature of 130F.

Very good.
Did this with ~2.25lb fillet with skin that I let come to room temperature.
Possibly could've used a touch more salt.
